If I add 2 GB data can I take it off and go back to previous plan the following month?

Depending on your plan, yes you can add 2 GB of data and then remove it at some future date.

If your plan has this option, you will be able to do this in MyBell without changing your plan.

If I need to add data to my cellular plan just for this month is there a way to do that or do I have to add a monthly add-on and then remove it before next billing cycle?

You need to add a monthly add-on & then remove the add-on. This can be completed on MyBell.

My present plan is simple. Unlimited calling & Texting within Canada. But going to the Jays game this summer and got tickets through Ticketmaster. Believe I need data on my phone so I can scan the barcodes to get into the game.

You should be able to add your Ticketmaster tickets from home to your Apple Wallet or your Google Pay This can be scanned without data & Wi-Fi. Keep in mind, if you need to access your Ticketmaster account, or anything else, then you would need data or a Wi-Fi network connection. To be safe, I would have some data when there is no Wi-Fi & you forget to add your tickets to your mobile device.

Here is a link to their web site, recommending that you download your tickets to your mobile Wallet before leaving home.
