This is unfortunately not possible. Once deleted from your phone, text message or call history would not be retrievable.

Good Day.
Once deleted from your phone, call history would be unable to retrieved and cannot be provided. The same also goes for text messaging history.
Call and message records/transcripts are also not available upon request, unless required for court related purposes. If it is needed for such a request, it has to be requested by the court/lawyers.
You can view your call history in MyBell.
Login to MyBell. Select > Mobility service. Select > My Mobility usage. You can select up to 6 months Voice, long distance & text usage history plus the current month.

Incoming & outgoing call history cannot be retrieved nor provided once it has been deleted from your device.
You can obtain some of the information that you are requesting by logging in to your MyBell account using any web browser & Select > Your mobile service. Select > View usage. Select > Voice, long distance and text usage. Choose > Voice, long distance or text. Dates, time, from city, to city, number called to / from, call type & duration are displayed.
There will be a mix of known & unknown numbers displayed. Unknown numbers are just that. They cannot be displayed due to privacy laws. E.g. technical limitations, Caller ID, Privacy, Blocked calls, etc.

I have a 3 phones on a family share plan. I cannot see a list any texts listed in the detailed usage. Voice yes, data yes,
Randomly one of the 3 lines will display text usage when another doesn;t. Even if one of our shared lines is texting to another.
Is there a way to get a complete list of all texts received and sent on any one of our shared lines.

For example, are any of your devices Apple products, iPhone & iPad? It's only considered a text message (or SMS, or MMS) if it's being sent from a phone number to a phone number. iMessages are sent over the internet. While iMessage can be connected to a phone number, iMessages actually rely on your Apple ID — the email address that lets you log into iPhones, iPads, etc.
You can send texts over Wi-Fi or cellular service.
Texts you send and receive using iMessage don’t count against your SMS, MMS, or RCS allowances in your cellular messaging plan, but cellular data rates may apply.
When you communicate with others who also use iMessage on an Apple device, the texts appear in blue bubbles. (SMS, MMS, and RCS messages appear in green bubbles.) Your message will be sent with iMessage when you see a blue send button; a green send button indicates the message will be sent with SMS, MMS, or RCS or your cellular service.

In regards to Sophia … if she is the only account holder and the additional phone line is just in her name, how would this be breaching privacy laws? It’s her account. In the event your child went missing and the text history content was needed - is there a way to access the text content?

Privacy laws are there to protect all of us. We cannot selectively choose to follow some parts & disregard other parts of the law.
Once deleted from your phone, call history would be unable to retrieved and cannot be provided. The same also goes for text messaging history.
Call and message records/transcripts are also not available upon request, unless required for court related purposes. "If it is needed for such a request, it has to be requested by the court/lawyers."
That is the law that we are all bound to follow.

If they are not deleted from my under age child’s phone which is lost, and this is not a legal matter - how can one retrieve this text information?

Thank you for your question. The most simple answer is you can't. That may not be what you want to hear, but that is certainly my understanding of how text messaging works.
