when composing an email, i used to be able to go to a full screen format, that option is no longer available, would like to know how to restore this feature

I can only assume that you are using your browser to compose your emails. I would suggest that you check your browser settings. I have verified your issue on three different browsers, & I can not recreate your problem.
If you are using some other mail client, or the issue is something different, could you provide further specific & details.
You can resize the compose & every other Bell webmail window if you adjust your browser window size when it opens up. Eg. Maximize, Restore size or resize the browser manually. This is a window within a window.
If you use the restore button in the web mail it closes the compose screen. To go full screen, you need to adjust your browser window....... not the webmail window. Try this.

When typing a long email the keyboard covers what I am typing. Also cannot scroll down to see the email I am responding too. New issue I didn't have before.

Thank you for posting your question. Can you please provide us with further information & specific details?
- How are you accessing your Bell email account? E.g. Edge, Safari, Google, etc.
- Are you using a computer? If so, which operating system? Microsoft Windows 10 or 11, Safari, Linux, etc.
- Are you accessing your email with a tablet or device?
- Are you using an email client? Outlook, Gmail, Apple Mail, etc.
There are any number of factors that limit what is visible to you on your viewing area. For example, if you are accessing Bell webmail with a browser, you can adjust the window size, text size, etc.
Have you rebooted your device recently? If not, please do so. Please verify that your operating system & apps are fully up to date. Have made any recent adjustments to your screen display, such as text size, window area, resolution, device settings, etc.

I have reloaded app. I have restarted phone. I have checked all setting and done a reset for keyboard.
To clarify. When I reply to an email as soon as I hit reply and start typing I cannot scroll down to see that message.
Furthermore if I am typing a longer email maybe 15-20 lines my typing then disappears behind the keyboard, I can scroll up to see what I typed but as soon as a I start retyping the keyboard covers it. This is all new on both phones with Bell email. Any other application I can scroll no issue
