My option on my iPhone for wifi calling was always there, I have updated my phone and my server carryings this option but the option is no longer there. What’s going on with this?

You mentioned that you "updated my phone and my server carryings this option". Please explain what you mean by this.
Is this a new device/ Have you verified your device and / or transferred service to this device on MyBell?
In order to turn on Wi-Fi calling, you must be connected to a Wi-Fi network? Are you connected to a network? Does your mobility plan indicate Wi-Fi calling option is activated? Have you tried restarting your device? Turning off your W-Fi? Resetting your device network settings?
I have questions about using Wi-Fi Calling : Coverage (bell.ca)
If you are still experience issues after reviewing the above, you should contact Bell Mobility tech support.
